Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups fresh cherries, pitted and chopped
- 2 tbsp sugar for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Whisk together melted butter, milk, eggs, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the chopped cherries.
- Divide the batter evenly among the muffin cups and sprinkle sugar on top.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
For best results, avoid overmixing the batter and use fresh cherries when possible.
