  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • Royal icing for decoration
  • Sprinkles (optional)

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt. Set aside.
  2. In a large bowl, beat the softened butter and brown sugar together until the mixture is light and fluffy.
  3. Mix in the large egg, molasses, and vanilla extract until combined.
  4. Gradually stir in the dry ingredients to the wet mixture until just combined. Avoid overmixing.
  5. Divide the dough into two halves, wrap each half in plastic wrap, and refrigerate for at least 2 hours or overnight.
  6. Preheat your oven to 350°F (175°C).
  7. On a floured surface, roll out the chilled dough to about 1/4 inch thick. Cut out shapes with cookie cutters.
  8. Place the cookies on baking sheets lined with parchment paper and bake for 8-10 minutes.
  9. Allow the cookies to cool on a wire rack before decorating with royal icing and optional sprinkles.
