Description

Delicious chewy cookies combining oats, peanut butter, and chocolate chips for a comforting snack.


Ingredients

  • 3/4 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1/2 cup unsalted butter (room temperature)
  • ½ cup brown sugar (firmly packed, dark or light brown)
  • ½ cup granulated sugar
  • ½ cup creamy peanut butter
  • ½ teaspoon pure vanilla extract
  • 1 large egg
  • 2 cups old-fashioned rolled oats
  • 1 cup chocolate chips

Instructions

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  2. Cream butter and both sugars on medium-high until combined. Add peanut butter and mix until light and fluffy, about 3-5 minutes.
  3. Scrape down the bowl and add vanilla and the egg. Mix until well combined.
  4. With the mixer on low, add the flour mixture and blend until just combined.
  5. Fold in oats and chocolate chips.
  6. Chill the dough for 45 minutes to 1 hour.
  7. Preheat the oven to 350°F.
  8. Prepare baking sheets with a silicone baking mat or parchment paper.
  9. Using a cookie scoop, place dough on the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 12-15 minutes until the edges are lightly browned.
  11. Allow to cool on the pan for 5 minutes before transferring to a cooling rack.

Notes

For best results, serve slightly warm with a glass of milk or a scoop of vanilla ice cream.
