- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat.
- Add the onion, garlic, carrot, and celery, and sauté until softened.
- Add the chicken thighs and brown on all sides.
- Stir in the white beans, chicken broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes, until the chicken is cooked through and tender.
- Season with salt and pepper to taste.
