Instructions
- Heat vegetable oil in a large wok or skillet over medium-high heat.
- Add sliced chicken breast and cook until browned, about 5-7 minutes.
- Add minced garlic and sliced onion, and sauté until fragrant.
- Toss in mixed vegetables and stir-fry for another 3-4 minutes.
- In a small bowl, mix chicken broth, soy sauce, and cornstarch until smooth.
- Pour the sauce over the chicken and vegetables; stir well and cook until the sauce thickens.
- Season with salt and pepper to taste.
- Serve hot over cooked rice.
