- 2 chicken breasts
- 2 cups fresh spinach
- 1 cup cream
- 1 cup chicken broth
- 1 cup Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
- Pasta or rice (for serving)
Instructions
- In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper and cook until golden brown. Remove and set aside.
- In the same skillet, add minced garlic and sauté until fragrant. Add the spinach and cook until wilted.
- Pour in the chicken broth and cream, stirring to combine. Bring to a simmer.
- Add the Parmesan cheese and stir until melted and smooth.
- Return the chicken to the skillet and simmer until cooked through.
- Serve over pasta or rice, garnished with additional spinach and cheese if desired.
Notes
For a thicker sauce, let it simmer longer after adding the cream. Fresh spinach provides better taste and texture than frozen.
