- 2 cups cooked chicken breast, shredded
- 1 ripe mango, thinly sliced
- 1 cup shredded carrots
- 1 cucumber, julienned
- 2 tablespoons fresh cilantro, chopped
- 8–10 rice paper wrappers
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1 teaspoon sesame oil
Instructions
- Prepare all the fillings: shred the chicken, slice the mango, and julienne the cucumber and carrots if needed.
- In a small bowl, whisk together the soy sauce, lime juice, honey, and sesame oil to make the dressing.
- Lightly dip one rice paper wrapper in warm water until softened, being careful not to soak too long.
- Place a small amount of shredded chicken, mango slices, shredded carrots, cucumber, and cilantro in the center of the wrapper.
- Drizzle a small amount of dressing on top of the filling.
- Fold in the sides of the wrapper and roll tightly from the bottom to the top to secure the filling.
- Repeat with the remaining wrappers and fillings, creating a platter of bundles.
- Serve fresh with the remaining dressing on the side for dipping.
