A quick and delicious chicken stir fry featuring swiss chard, perfect for busy weeknights.

Ingredients

Scale
  • 1 lb boneless chicken breasts or thighs, cut into bite-size pieces
  • 4 cups swiss chard, chopped
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • Pinch of chili flakes (optional)
  • 1 bell pepper, sliced (optional)
  • Salt and pepper to taste
  • Oil for cooking
  • Rice or noodles, for serving

Instructions

  1. Pat the chicken dry and season with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add chicken and cook until browned, about 5-7 minutes.
  4. Stir in onions and garlic, cooking until fragrant.
  5. Add swiss chard and cook for another 2 minutes until wilted.
  6. Pour in soy sauce and lemon juice, allowing to bubble slightly.
  7. Serve over rice or noodles, topped with chili flakes and sesame seeds if desired.

Notes

You can substitute chicken with tofu or shrimp, and other leafy greens can be used in place of swiss chard.
