Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 cup white wine
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Creamy polenta or risotto for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onions, carrots, and celery; sauté until soft.
  3. Stir in the minced garlic and cook for 1 minute.
  4. Season the chicken thighs with salt and pepper and add them to the pot, browning on all sides.
  5. Pour in white wine and allow to simmer for a few minutes.
  6. Add chicken broth, thyme, and bay leaf.
  7. Cover and reduce heat, allowing the dish to slow-cook for 90 to 120 minutes until the chicken is tender.
  8. Remove and discard the bay leaf.
  9. Serve the osso bucco over creamy polenta or risotto.

Notes

For maximum flavor, choose bone-in thighs. Allow to rest before serving to redistribute juices. Sauté veggies well for deeper flavors.
