- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 cup white wine
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Creamy polenta or risotto for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onions, carrots, and celery; sauté until soft.
- Stir in the minced garlic and cook for 1 minute.
- Season the chicken thighs with salt and pepper and add them to the pot, browning on all sides.
- Pour in white wine and allow to simmer for a few minutes.
- Add chicken broth, thyme, and bay leaf.
- Cover and reduce heat, allowing the dish to slow-cook for 90 to 120 minutes until the chicken is tender.
- Remove and discard the bay leaf.
- Serve the osso bucco over creamy polenta or risotto.
Notes
For maximum flavor, choose bone-in thighs. Allow to rest before serving to redistribute juices. Sauté veggies well for deeper flavors.
