Ingredients

- 1/2 cup quinoa, dry
- 2 teaspoons ancho chili powder
- Salt to taste
- 2–3 cups spinach, chopped
- 10 medium grape tomatoes
- 1 large mango
- 1 medium avocado
- 1/2 cup cooked black beans, drained
- 1/4 cup corn, canned and drained
- 1/4 – 1/2 teaspoon cayenne
- Avocado Lime Dressing or squeeze of lime juice
Instructions
- Cook the quinoa according to package directions, adding 1 teaspoon of chili powder and salt during cooking.
- Chop the spinach and slice the tomatoes, mango, and avocado into bite-sized pieces while the quinoa cooks.
- Layer the spinach, grape tomatoes, black beans, corn, cooked quinoa, sliced mango, and avocado in serving bowls or on a platter.
- Sprinkle the remaining chili powder, cayenne, and salt over the mango slices.
- Drizzle each salad with avocado lime dressing or a squeeze of fresh lime juice for a zesty finish.
