Instructions
- Whisk together the olive oil, lime juice, minced garlic, chipotle chili powder, smoked paprika, cumin, salt, and black pepper until fully combined.
- Add the chicken to the bowl, ensuring it is coated in the marinade. Cover and refrigerate for at least 30 minutes or up to overnight.
- Heat a grill or large skillet over medium-high heat until hot.
- Remove the chicken from the marinade and grill for about 6-7 minutes per side until cooked through and char marks appear.
- Let the chicken rest for approximately 5 minutes before slicing it into strips.
- Warm the black beans in a small saucepan or microwave.
- If using frozen corn, char it in a hot, dry skillet for about 3-4 minutes until golden.
- Whisk together the sour cream or Greek yogurt, lime juice, minced chipotle peppers, garlic powder, and honey in a small bowl until smooth for the sauce.
- Assemble by layering the warm black beans, charred corn, sliced avocado, and sliced chicken in bowls.
- Drizzle the creamy chipotle sauce over the top and finish with fresh cilantro.
