Description

Deliciously sweet and rich, these banana muffins are easy to make and perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe medium bananas, mashed
  • 1 cup semi-sweet chocolate chips, plus more for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Fold in the mashed bananas until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix; a few lumps are fine.
  7. Gently fold in 1 cup of chocolate chips.
  8. Divide the batter evenly among the muffin cups, filling each about two-thirds full. Sprinkle a few extra chocolate chips on top of each muffin if desired.
  9. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  10. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor; don’t overmix the batter to keep muffins fluffy.
