- 1 cup of dried figs
- 1 cup of raisins
- 1 cup of currants
- 1/2 cup of chopped nuts
- 1 cup of breadcrumbs
- 1 cup of shredded suet or vegetable shortening
- 1/2 cup of brown sugar
- 1/2 cup of molasses
- 2 teaspoons of mixed spice
- 1 teaspoon of baking powder
- 1/2 cup of milk
- 4 large eggs
Instructions
- Soak the dried fruits in warm water for a few hours, then drain.
- In a large mixing bowl, combine the soaked fruits, nuts, breadcrumbs, suet, brown sugar, molasses, mixed spice, and baking powder.
- In a separate bowl, whisk together the eggs and milk, then mix into the fruit mixture until well combined.
- Pour the mixture into a greased pudding bowl, cover it with a pleated lid or foil.
- Steam the pudding in a large pot of water for about 360 minutes, ensuring the water doesn’t boil dry.
- Allow the pudding to cool, then store it in a cool place.
- Before serving, steam the pudding again for about 120 minutes. Serve hot with custard or brandy sauce.
Notes
For the best flavor, make the pudding in advance and let it sit for at least a week before serving. Use a variety of dried fruits for a more complex taste.
