- 4 – 5 pounds corned beef brisket with spice packet
- 4 cups water
- 1 large onion (quartered)
- 3 cloves garlic (smashed)
- 4 – 5 large carrots (cut into chunks)
- 1 small head cabbage (cut into wedges)
- 4 – 5 medium potatoes (cut into chunks)
- 1 teaspoon black peppercorns
- 2 bay leaves
- Optional for garnish: fresh parsley or mustard
Instructions
- Rinse the corned beef brisket under cold running water.
- Prepare a large pot or Dutch oven, placing the cleaned corned beef inside.
- Add the spice packet, 4 cups of water, quartered onion, smashed garlic, black peppercorns, and bay leaves.
- Bring the pot to a boil over high heat.
- Reduce the heat to low, cover the pot, and let it simmer gently for about 120 to 180 minutes.
- Add the carrots, potatoes, and cabbage wedges to the pot after 120 to 180 minutes.
- Continue to simmer for another 30 to 60 minutes until vegetables are tender.
- Remove the corned beef from the pot and let it rest for 10 minutes before slicing.
- Serve the meat with the vegetables garnished with fresh parsley or mustard.
Notes
For a flavor boost, consider adding a splash of apple cider vinegar or a dash of hot sauce to the broth.
