Description

A delightful holiday favorite, these classic gingerbread men cookies are spiced and soft, perfect for decoration and sharing with loved ones.


Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup unsulfured molasses
  • Royal icing for decoration

Instructions

  1. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt until well combined.
  2. In another bowl, beat together the softened butter and brown sugar until light and fluffy.
  3. Add the egg and molasses to the butter mixture and mix thoroughly until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until everything is combined into a smooth dough.
  5. Divide the dough into two equal disks, wrap each in plastic wrap, and refrigerate for at least 2 hours.
  6. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  7. Roll out one disk of dough on a lightly floured surface to about 1/4 inch thickness. Use a gingerbread man cookie cutter to cut out shapes.
  8. Place the cut-out cookies on the prepared baking sheets and bake for 8-10 minutes, or until firm to the touch.
  9. Allow the cookies to cool completely on a wire rack before decorating them with royal icing.
