A heartwarming soup combining earthy mushrooms, sweet caramelized onions, and nutritious kale, perfect for chilly days.


Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 large sweet onion, sliced 1/2 inch thick
  • 4 cloves garlic, finely chopped
  • 1 tsp sea salt
  • 1/2 tsp freshly cracked black pepper
  • 2 cups whole shiitake mushrooms
  • 2 cups baby bella or cremini mushrooms, sliced
  • 4 cups organic chicken broth or vegetable broth, gluten-free
  • 2 cups loosely chopped kale leaves
  • 1/2 cup coconut milk or coconut cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sliced sweet onion and a pinch of salt. Sauté until the onions are soft and caramelized, about 10-15 minutes.
  2. Add the chopped garlic, stirring frequently for another 2 minutes until fragrant.
  3. Stir in the sea salt and black pepper. Then add the whole shiitake mushrooms and sliced baby bella or cremini mushrooms. Cook until browned and tender, about 5-7 minutes.
  4. Pour in the broth. Bring the mixture to a simmer and cook for about 10 minutes to meld flavors.
  5. Add the chopped kale, simmering for an additional 5 minutes until the kale is tender but vibrant green.
  6. Stir in the coconut milk or cream to add a rich texture. Adjust seasoning if necessary and serve warm.

Notes

Take your time caramelizing the onions for the best flavor. Experiment with different mushroom types for variety.
