- 2 tbsp extra-virgin olive oil
- 1 large sweet onion, sliced 1/2 inch thick
- 4 cloves garlic, finely chopped
- 1 tsp sea salt
- 1/2 tsp freshly cracked black pepper
- 2 cups whole shiitake mushrooms
- 2 cups baby bella or cremini mushrooms, sliced
- 4 cups organic chicken broth or vegetable broth, gluten-free
- 2 cups loosely chopped kale leaves
- 1/2 cup coconut milk or coconut cream
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced sweet onion and a pinch of salt. Sauté until the onions are soft and caramelized, about 10-15 minutes.
- Add the chopped garlic, stirring frequently for another 2 minutes until fragrant.
- Stir in the sea salt and black pepper. Then add the whole shiitake mushrooms and sliced baby bella or cremini mushrooms. Cook until browned and tender, about 5-7 minutes.
- Pour in the broth. Bring the mixture to a simmer and cook for about 10 minutes to meld flavors.
- Add the chopped kale, simmering for an additional 5 minutes until the kale is tender but vibrant green.
- Stir in the coconut milk or cream to add a rich texture. Adjust seasoning if necessary and serve warm.
Notes
Take your time caramelizing the onions for the best flavor. Experiment with different mushroom types for variety.
