- 1/2 cup plus 2 tablespoons granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 10 Oreo or chocolate sandwich cookies (coarsely chopped)
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- In a small bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
- In a large mixing bowl, beat butter and sugar on medium speed until combined.
- Add the egg and vanilla extract; mix until smooth.
- Reduce speed to low and slowly add dry ingredients, mixing until cookie dough forms.
- Add chopped cookies and white chocolate chips; mix until evenly dispersed.
- Use a small cookie scoop (2 tablespoons) to scoop dough and round it with your hands; gently press down the cookies.
- Bake for 8-10 minutes or until the sides are set.
- Let the cookies cool for a few minutes on the baking sheet before transferring to a cooling rack.
