Description

Delightful soft and chewy cookies packed with chocolate sandwich cookies and white chocolate bits.


Ingredients

  • 1 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter (softened, at room temperature)
  • 1/2 cup plus 2 tablespoons granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 10 Oreo or chocolate sandwich cookies (coarsely chopped)
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. In a small bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat butter and sugar on medium speed until combined.
  4. Add the egg and vanilla extract; mix until smooth.
  5. Reduce speed to low and slowly add dry ingredients, mixing until cookie dough forms.
  6. Add chopped cookies and white chocolate chips; mix until evenly dispersed.
  7. Use a small cookie scoop (2 tablespoons) to scoop dough and round it with your hands; gently press down the cookies.
  8. Bake for 8-10 minutes or until the sides are set.
  9. Let the cookies cool for a few minutes on the baking sheet before transferring to a cooling rack.
