Description

A healthy, crustless quiche packed with creamy cottage cheese and fresh spinach, perfect for breakfast or brunch.


Ingredients

  • 1 cup cottage cheese
  • 2 cups fresh spinach (chopped)
  • 4 large eggs
  • 1 cup shredded cheddar cheese (divided)
  • 1 small onion (finely chopped)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick cooking spray.
  2. In a pan over medium heat, sauté the chopped onion until softened, about 5 minutes.
  3. In a large bowl, combine the cottage cheese, sautéed onion, spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Mix everything well.
  4. Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.
  5. Bake for 30-35 minutes until the quiche is set and golden brown on top. Let it cool slightly before slicing.

Notes

Use fresh spinach for better flavor and texture. Feel free to customize the cheese and add herbs or other vegetables as desired.
