Description

A deliciously cheesy dip combining ground beef, melty cheeses, and zesty ingredients, perfect for parties and gatherings.


Ingredients

Scale
  • 1/2 lb ground beef
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
  • 3/4 cup pale ale
  • 1/2 cup pepper jack cheese, shredded
  • 16 oz Velveeta cheese, cubed
  • 1 (14.5 oz) can Rotel tomatoes, undrained
  • 1 cup black beans, drained and rinsed
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat and drain any excess grease.
  2. Season the beef with salt, pepper, and optional red pepper flakes.
  3. Add the pale ale to the skillet and simmer until it reduces by about half, about 4-5 minutes.
  4. Lower the heat to medium-low and add the Velveeta and pepper jack cheeses. Stir until both cheeses are melted and the mixture is smooth.
  5. Stir in the undrained Rotel tomatoes, black beans, red onion, and cilantro. Cook for an additional 5 minutes until everything is heated through and the flavors meld together.
  6. Serve hot with tortilla chips. If you have leftovers, refrigerate them and reheat gently.

Notes

Adjust the spices according to your taste. For a vegetarian version, omit the beef and add more beans or veggies like corn or bell peppers.
