Description

A warm and hearty soup featuring the rich flavors of Italian sausage, tender potatoes, and fresh greens, perfect for chilly evenings.


Ingredients

  • 1 lb Italian sausage (mild or hot), casings removed
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale, chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Optional: grated Parmesan cheese for serving

Instructions

  1. In a large pot over medium heat, cook the Italian sausage until browned and fully cooked, breaking it into chunks as it cooks. If there’s excess grease, be sure to remove it.
  2. Add the diced onion to the pot and cook until softened, about 3–4 minutes.
  3. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the cubed potatoes, chicken broth, oregano, basil, red pepper flakes (if using), salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 15–20 minutes, or until the potatoes are fork-tender.
  6. Stir in the heavy cream and fresh spinach or kale. Simmer for an additional 5 minutes until the greens are wilted.
  7. Taste the soup and adjust the seasoning as needed.
  8. Serve hot with grated Parmesan cheese on top if desired.

Notes

For a healthier option, consider using turkey sausage and light alternatives for cream. This soup can also be frozen for up to three months.
