Description

A sweet and tart cranberry curd perfect for spreading on toast, topping desserts, or enjoying straight from the jar.


Ingredients

Scale
  • 12 oz fresh (or frozen) cranberries
  • 1/2 cup granulated sugar
  • 3/4 cup water
  • 3 large egg yolks
  • 2 tbsp unsalted butter

Instructions

  1. In a medium saucepan, combine cranberries, water, and sugar over medium-high heat.
  2. Once boiling, reduce heat to low and simmer for about 10 minutes.
  3. Remove from heat and cool for 5-10 minutes.
  4. Transfer the mixture to a blender and blend on high until smooth.
  5. Add the smooth mixture back to a pot and whisk in the egg yolks until combined.
  6. Heat the mixture over medium heat, whisking continuously for 5-10 minutes, until thickened.
  7. Remove from heat and stir in butter until melted.
  8. Pour the curd into a sterile container, cool completely before covering and storing in the fridge.

Notes

Use fresh cranberries for the best flavor. For a vegan version, use aquafaba instead of egg yolks and coconut oil or vegan butter instead of regular butter.
