- 1 (8 oz) package cream cheese, softened
- 1 cup sour cream
- 1/4 cup butter, melted
- 1 (15 oz) can corn, drained (or equivalent fresh or frozen corn)
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions (optional)
- 1 cup cornmeal
- 1 tsp baking powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the softened cream cheese, sour cream, and melted butter until smooth.
- Stir in the corn, cheddar cheese, and green onions if using.
- In a separate bowl, sift together the cornmeal, baking powder, salt, and pepper.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 45-50 minutes until golden and set.
- Let cool slightly before serving.
Notes
Store leftovers in an airtight container in the refrigerator for about 3-4 days. Can also be frozen for longer storage.
