Description

A delightful dish that combines creamy textures with a touch of sweetness from corn, perfect for family dinners or gatherings.


Ingredients

  • 1 (8 oz) package cream cheese, softened
  • 1 cup sour cream
  • 1/4 cup butter, melted
  • 1 (15 oz) can corn, drained (or equivalent fresh or frozen corn)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions (optional)
  • 1 cup cornmeal
  • 1 tsp baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the softened cream cheese, sour cream, and melted butter until smooth.
  3. Stir in the corn, cheddar cheese, and green onions if using.
  4. In a separate bowl, sift together the cornmeal, baking powder, salt, and pepper.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Pour the mixture into a greased 9×13 inch baking dish.
  7. Bake for 45-50 minutes until golden and set.
  8. Let cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. Can also be frozen for longer storage.
