- 2 cups of shredded cheese
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
Instructions
- Peel and dice the potatoes.
- In a large pot, combine the diced potatoes and broth, then bring to a boil.
- Once boiling, reduce heat and simmer until the potatoes are tender.
- Use a potato masher to mash some of the potatoes for a creamy texture.
- Stir in the heavy cream and shredded cheese until melted and fully combined.

Notes
For a thicker soup, mash more of the potatoes or add a little cornstarch mixed with water. Top with extra cheese, sour cream, or fresh herbs for added flavor.
