Description

Ingredients

  • 4 cups potatoes, peeled and sliced (Yukon gold or russet)
  • 2 cups cooked ham, diced
  • 1 small onion, diced
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1/2 cup milk

Instructions

  1. Layer the potatoes, ham, and onion in the crockpot.
  2. In a bowl, mix the cream of mushroom soup, milk, salt, and pepper until combined. Pour over the layered ingredients in the crockpot.
  3. Cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  4. About 30 minutes before serving, stir in the shredded cheddar cheese and continue cooking until melted. Serve warm.

Notes

For a richer flavor, consider using a combination of cheddar and another cheese like Gruyère. Add frozen peas for color and nutrition.
