- 4 cups potatoes, peeled and sliced (Yukon gold or russet)
- 2 cups cooked ham, diced
- 1 small onion, diced
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
- Optional: Chopped chives for garnish
Instructions
- Place the sliced potatoes, diced ham, and diced onion in the bottom of the slow cooker.
- In a bowl, mix together cream of chicken soup, milk, salt, and pepper until smooth.
- Pour the mixture over the potatoes and ham in the slow cooker.
- Stir gently to combine, ensuring the potatoes are coated with the sauce.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- About 15 minutes before serving, stir in shredded cheddar cheese and allow it to melt.
- Serve warm, garnished with chopped chives if desired.
Notes
For a vegetarian version, substitute ham with tofu or lentils and use vegetable soup.
