  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 8 oz fresh cremini or button mushrooms, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
  • Additional salt and pepper, to taste

Instructions

  1. Pat the chicken thighs dry with paper towels and season generously with salt and pepper.
  2. Heat butter and olive oil in a large skillet over medium-high heat, then sear the chicken thighs skin-side down for 5 to 7 minutes until crispy and golden. Flip and cook the other side for 2 to 3 minutes, then remove from skillet.
  3. Add diced mushrooms and minced garlic to the skillet and sauté for 4 to 5 minutes until mushrooms brown and garlic becomes fragrant.
  4. Pour in chicken broth, scraping up browned bits, and let reduce slightly before stirring in the heavy cream. Simmer until sauce thickens.
