Description

A delicious and comforting meal featuring creamy yogurt, rich Parmesan cheese, and tender chicken, perfect for weeknights or impressing guests.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach (optional)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat a little olive oil over medium heat. Add the diced chicken breast and cook until browned and cooked through.
  3. Add garlic to the skillet and sauté for an additional minute.
  4. Lower the heat and stir in Greek yogurt and Parmesan cheese until smooth.
  5. Add the cooked pasta to the skillet and toss to combine. If using, add spinach and cook until wilted.
  6. Season with salt and pepper to taste. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat with a splash of water or additional Greek yogurt.
