- 8 oz whole wheat pasta
- 1 lb lean chicken breast, diced
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 cup spinach (optional)
- Salt and pepper to taste
- Olive oil
Instructions
- Cook the whole wheat pasta according to package instructions. Drain and set aside.
- In a skillet, heat a little olive oil over medium heat. Add the diced chicken breast and cook until browned and cooked through.
- Add garlic to the skillet and sauté for an additional minute.
- Lower the heat and stir in Greek yogurt and Parmesan cheese until smooth.
- Add the cooked pasta to the skillet and toss to combine. If using, add spinach and cook until wilted.
- Season with salt and pepper to taste. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat with a splash of water or additional Greek yogurt.
