- 2 cups potatoes, diced
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tbsp Dijon mustard
- 1/2 cup red onion, chopped
- 1 tsp salt
- 1/2 tsp pepper
- Fresh herbs (e.g., dill or parsley), to taste
Instructions
- Cook the potatoes in salted water until they are tender, then drain and cool.
- Blanch the green beans in boiling water for a couple of minutes, then transfer them to ice water to stop the cooking.
- In a large bowl, mix together the mayonnaise, sour cream, Dijon mustard, salt, and pepper.
- Once the potatoes and green beans are cooled, add them to the bowl.
- Chop the red onion and add it along with the fresh herbs to the mixture.
- Gently toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
