Description

A delightful salad combining fresh green beans and hearty potatoes in a rich, creamy dressing. Perfect for picnics or as a side dish.

Ingredients

Scale
  • 1 lb green beans
  • 2 cups potatoes, diced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp Dijon mustard
  • 1/2 cup red onion, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • Fresh herbs (e.g., dill or parsley), to taste

Instructions

  1. Cook the potatoes in salted water until they are tender, then drain and cool.
  2. Blanch the green beans in boiling water for a couple of minutes, then transfer them to ice water to stop the cooking.
  3. In a large bowl, mix together the mayonnaise, sour cream, Dijon mustard, salt, and pepper.
  4. Once the potatoes and green beans are cooled, add them to the bowl.
  5. Chop the red onion and add it along with the fresh herbs to the mixture.
  6. Gently toss everything together until well combined.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Use fresh ingredients for the best flavor and texture. Adjust the dressing to taste for creaminess preference.
