Ingredients

  • 2 large boneless, skinless chicken breasts
  • 6 slices thick cut smoked turkey bacon
  • 8 oz cream cheese, softened
  • 1 packet (or 2 tablespoons) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 2 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • Black pepper, to taste
  • Optional: pinch of red pepper flakes
  • Optional: 2 tablespoons water or chicken broth (to loosen sauce)

Instructions

  1. Cook the bacon: Place bacon slices in a cold skillet, then turn heat to medium. Cook until crispy, about 5–7 minutes, flipping occasionally. Transfer to a paper towel-lined plate and crumble once cool.
  2. Prepare the chicken: Season both sides of chicken breasts with garlic powder and black pepper. In the same skillet, remove excess bacon grease, leaving about 1 tablespoon for flavor. Add chicken and cook for 5–7 minutes per side until golden and cooked through (internal temperature should reach 165°F / 74°C). Remove chicken and set aside.
  3. Make the creamy sauce: Lower heat to medium-low. In a mixing bowl, combine softened cream cheese and ranch seasoning. Add a splash of water or chicken broth (about 2 tablespoons) to loosen the mixture. Stir until smooth and creamy.
  4. Combine and simmer: Pour the cream cheese mixture into the skillet. Stir gently for 2–3 minutes until it starts to melt and thicken. Add shredded cheddar cheese and stir until melted and smooth.
  5. Finish the dish: Return chicken breasts to the skillet, spooning sauce over them. Sprinkle crumbled bacon and green onions on top. Cover and simmer for 3–5 minutes to meld flavors and warm through.
  6. Serve: Remove from heat and let rest for a couple of minutes before serving.

Notes

Use room-temperature cream cheese for a smoother sauce. Reserve a bit of bacon fat for flavor.
