Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cup broccoli florets, steamed
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup almond flour (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, cream cheese, half of the cheddar cheese, sour cream, steamed broccoli, chicken broth, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Pour the mixture into a greased baking dish.
  4. Sprinkle the remaining cheddar cheese and almond flour (if using) on top.
  5. Bake for 25-30 minutes, or until the casserole is heated through and bubbly.
  6. Let it cool slightly before serving.

Notes

Use leftover rotisserie chicken for convenience. Feel free to experiment with different vegetables and cheeses.
