Description
Cozy, cheesy, and full of basil flavor — this pesto lasagna soup is a slow cooker winner with chicken, noodles, spinach, and cream.
Ingredients
1 lb chicken breasts or thighs
1/2 onion, chopped
3 garlic cloves, minced
6 cups chicken broth
10 oz lasagna noodles, broken
1/2 cup basil pesto
1/2 cup heavy cream
1 cup shredded mozzarella
1/2 cup grated parmesan
2 cups fresh spinach
Salt and pepper to taste
Optional: pine nuts, fresh basil
Instructions
1. Add chicken, onion, garlic, broth to crockpot. Season with salt and pepper.
2. Cook on LOW for 6 hours.
3. Shred chicken and return to pot.
4. Add noodles, cook 30–40 min on HIGH.
5. Stir in pesto, cream, mozzarella, and parmesan.
6. Add spinach and stir until wilted. Serve hot.
Notes
Use rotisserie chicken to save time.
Add ricotta for a creamier lasagna vibe.
Double pesto for bolder flavor.
