Description
Creamy and comforting, this sun-dried tomato lasagna soup is packed with rich tomato flavor, sausage, herbs, and cheesy goodness. Your crockpot makes it effortlessly delicious!
Ingredients
1 lb Italian sausage
1/2 onion, diced
1/2 cup sun-dried tomatoes, chopped
1 tsp garlic, minced
1 can (28 oz) crushed tomatoes
1 can (14.5 oz) fire-roasted diced tomatoes
4 cups chicken broth
1 tbsp Italian seasoning
10 oz lasagna noodles, broken
1/2 cup heavy cream
1 cup shredded mozzarella
1/2 cup shredded parmesan
Salt and pepper to taste
Optional: 1/4 tsp red pepper flakes
Instructions
1. Brown sausage in skillet and sauté with onion and garlic.
2. Transfer sausage mixture and sun-dried tomatoes to crockpot. Add tomatoes, broth, and seasoning.
3. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
4. Add broken noodles and cook on HIGH for 30–40 minutes.
5. Stir in cream, mozzarella, and parmesan until melted.
6. Serve with fresh basil or extra cheese on top.
Notes
Sub ground turkey for a leaner soup.
Use evaporated milk for a lighter version.
Freeze before adding cream if making ahead.
