Ingredients
- Salmon fillets
- Parmesan cheese
- Garlic
- Cherry tomatoes
- Spinach
- Fresh basil
- Butter
- Salt
- Pepper
- Olive oil
Instructions
- Heat olive oil and butter in a skillet over medium heat.
- Season salmon fillets with salt and pepper, then sear in the skillet for about 4-5 minutes on each side, until cooked through.
- Remove salmon and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook until they start to burst.
- Stir in spinach and cook until wilted.
- Pour in cream and add Parmesan cheese, stirring until the sauce is smooth.
- Return salmon to the skillet and spoon sauce over fillets.
- Garnish with fresh basil and serve.
Notes
For a lighter version, use Greek yogurt instead of cream. You can also substitute spinach with kale or arugula.
