Description

A quick and easy meal with rich flavors of garlic, Parmesan, and fresh vegetables, ideal for weeknight dinners or special occasions.


Ingredients

  • Salmon fillets
  • Parmesan cheese
  • Garlic
  • Cherry tomatoes
  • Spinach
  • Fresh basil
  • Butter
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Heat olive oil and butter in a skillet over medium heat.
  2. Season salmon fillets with salt and pepper, then sear in the skillet for about 4-5 minutes on each side, until cooked through.
  3. Remove salmon and set aside.
  4. In the same skillet, add minced garlic and sauté until fragrant.
  5. Add cherry tomatoes and cook until they start to burst.
  6. Stir in spinach and cook until wilted.
  7. Pour in cream and add Parmesan cheese, stirring until the sauce is smooth.
  8. Return salmon to the skillet and spoon sauce over fillets.
  9. Garnish with fresh basil and serve.

Notes

For a lighter version, use Greek yogurt instead of cream. You can also substitute spinach with kale or arugula.
