- 2 cups cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 cup chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp chili powder
- 1 cup heavy cream or sour cream
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- In a large pot or slow cooker, combine the chicken, white beans, diced tomatoes, chicken broth, onion, garlic, cumin, oregano, and chili powder. Stir well.
- If using the stovetop, bring to a boil, then reduce heat and simmer for about 20 minutes. For a slow cooker, cook on low for 4-6 hours.
- Stir in heavy cream or sour cream during the last 10 minutes of cooking.
- Season with salt and pepper to taste.
- Serve hot and garnish with chopped cilantro if desired.
Notes
For a vegetarian version, omit the chicken and add more beans or vegetables. Adjust the spices for your preferred heat level.
