Description

Ingredients

  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 2 cups shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, chopped
  • 1/2 cup barbecue sauce, your favorite kind
  • 45 large flour tortillas
  • 2 tablespoons oil (vegetable or canola oil)

Instructions

  1. Combine the shredded chicken, cheddar cheese, chopped cilantro, red onion, and barbecue sauce in a mixing bowl. Toss until well-mixed.
  2. Place a tortilla on a flat surface and layer with about 1/2 cup of the chicken mixture, spreading it evenly.
  3. Starting at one end, roll the tortilla tightly, folding in the sides to seal in the filling.
  4. Heat a skillet over medium-high heat and add enough oil to coat the bottom. Place the wraps seam-side down in the skillet.
  5. Cook for approximately 2 minutes on each side until golden brown and crispy, ensuring they’re heated through.
  6. Serve immediately and enjoy!
