Description

A delightful twist on traditional French fries, these Crispy Carrot Fries are a healthy and tasty side dish or snack.


Ingredients

  • 2 lb carrots
  • 2 tablespoons cornstarch
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons avocado oil
  • Finely minced parsley (to serve)

Instructions

  1. Preheat your oven to 425°F and line 2 – 13×18″ baking sheets with parchment paper.
  2. Cut the carrots into thin sticks, aiming for even sizes.
  3. In a large bowl, toss the carrot sticks with cornstarch until coated.
  4. Add garlic powder, onion powder, Italian seasoning, salt, and pepper, and toss again.
  5. Drizzle oil over the mixture and toss until well coated.
  6. Spread the carrot fries evenly on the baking sheets, ensuring they are not touching.
  7. Bake for 15 minutes, then turn each fry over and bake for another 10-15 minutes or until golden brown and crispy.
  8. Serve immediately with a sprinkle of minced parsley.

Notes

For even cooking, cut the carrots evenly. Avoid overcrowding the baking sheet.
