- 2 lb carrots
- 2 tablespoons cornstarch
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons avocado oil
- Finely minced parsley (to serve)
Instructions
- Preheat your oven to 425°F and line 2 – 13×18″ baking sheets with parchment paper.
- Cut the carrots into thin sticks, aiming for even sizes.
- In a large bowl, toss the carrot sticks with cornstarch until coated.
- Add garlic powder, onion powder, Italian seasoning, salt, and pepper, and toss again.
- Drizzle oil over the mixture and toss until well coated.
- Spread the carrot fries evenly on the baking sheets, ensuring they are not touching.
- Bake for 15 minutes, then turn each fry over and bake for another 10-15 minutes or until golden brown and crispy.
- Serve immediately with a sprinkle of minced parsley.
Notes
For even cooking, cut the carrots evenly. Avoid overcrowding the baking sheet.
