Description

A delightful blend of textures and flavors featuring crispy chickpeas, creamy avocado, and savory tuna. Perfect for a healthy lunch or light dinner.


Ingredients

  • 2 cups Butterhead Lettuce
  • 1 (5oz) can Wild Planet Albacore Wild Tuna
  • 1/2 an Avocado
  • 1/2 cup Grape Tomatoes
  • 2 Tbsp Kalamata Olives
  • Lemon juice to taste
  • Drizzle of Olive Oil
  • Salt & black pepper to taste
  • ⅓ cup canned Chickpeas
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • Pinch of Black Pepper
  • Pinch of Pink Salt

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse and drain the canned chickpeas, then dry them with a towel.
  3. Toss the chickpeas in a bowl with smoked paprika, garlic powder, black pepper, and pink salt until they are evenly coated.
  4. Spread the seasoned chickpeas on the prepared baking sheet. Bake for about 15 minutes or until they are crispy and golden brown.
  5. In a large serving bowl, fill it with the butterhead lettuce as the base.
  6. Top the lettuce with the crispy chickpeas, sliced grape tomatoes, drained albacore tuna, sliced avocado, and Kalamata olives.
  7. Squeeze fresh lemon juice over the salad, drizzle with olive oil, and season with salt and black pepper to taste.
