- 2 cups Butterhead Lettuce
- 1 (5oz) can Wild Planet Albacore Wild Tuna
- 1/2 an Avocado
- 1/2 cup Grape Tomatoes
- 2 Tbsp Kalamata Olives
- Lemon juice to taste
- Drizzle of Olive Oil
- Salt & black pepper to taste
- ⅓ cup canned Chickpeas
- 1/2 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- Pinch of Black Pepper
- Pinch of Pink Salt
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Rinse and drain the canned chickpeas, then dry them with a towel.
- Toss the chickpeas in a bowl with smoked paprika, garlic powder, black pepper, and pink salt until they are evenly coated.
- Spread the seasoned chickpeas on the prepared baking sheet. Bake for about 15 minutes or until they are crispy and golden brown.
- In a large serving bowl, fill it with the butterhead lettuce as the base.
- Top the lettuce with the crispy chickpeas, sliced grape tomatoes, drained albacore tuna, sliced avocado, and Kalamata olives.
- Squeeze fresh lemon juice over the salad, drizzle with olive oil, and season with salt and black pepper to taste.
