- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season the chicken with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat.
- Add seasoned chicken and cook for 5-6 minutes on each side until golden and crispy.
- Remove chicken and set aside to rest.
- Lower heat to medium and sauté garlic for about 30 seconds until fragrant.
- Pour in the cream while stirring continuously to create a smooth sauce.
- Add Italian seasoning and parmesan cheese, mixing until creamy.
- If using spinach, stir it in and simmer for 2-3 minutes until wilted.
- Return chicken to the pan, spoon garlic sauce over the top, and simmer for an additional minute.
- Serve hot with your choice of sides.

For thicker sauce, let it simmer longer. Pair with pasta or roasted vegetables.
