- 3–4 lbs corned beef brisket
- 2 tbsp mustard
- 2 tbsp brown sugar
- 1 tbsp black pepper
- 1 tbsp smoked paprika
- 1 onion, quartered
- 3 cloves garlic, minced
- 3 cups beef broth
- 1/2 cup beer (optional)
- Carrots and potatoes (for serving, optional)
Instructions
- In a bowl, mix mustard, brown sugar, black pepper, and smoked paprika to create a rub.
- Rub the mixture all over the corned beef brisket.
- Place quartered onions and minced garlic in the slow cooker, followed by the brisket.
- Pour beef broth and beer over the brisket.
- Cover and cook on low for 480-600 minutes or until tender.
- Remove brisket, let it rest, and then slice against the grain.
- Serve with carrots and potatoes if desired.
Notes
Let the brisket rest for 10-15 minutes before slicing for best results. Feel free to adjust the seasoning to your taste.
