- 1 1/2 lbs boneless, skinless chicken breasts
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 1 cup salsa (mild or medium)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can black beans (drained and rinsed)
- 1 cup corn (frozen or canned)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a slow cooker, combine the chicken, rice, chicken broth, salsa, black beans, corn, chili powder, cumin, salt, and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-7 hours or on high for 4 hours until the chicken is cooked through and rice is tender.
- Remove the chicken, shred it with two forks, and return it to the slow cooker.
- Stir in the shredded cheese until melted.
- Serve warm, garnished with fresh cilantro if desired.

For extra flavor, feel free to add toppings like diced tomatoes, sour cream, or avocado.
