Description
Crockpot Cheesy Chicken and Broccoli Rice is a creamy, one-pot comfort meal made with lean chicken, fluffy rice, tender broccoli, and gooey cheddar all in the slow cooker!
Ingredients
1 cup uncooked brown rice
1 small yellow onion, chopped
2 cloves garlic, minced
1 tsp dried thyme
2½ cups low-sodium chicken broth (plus up to 1 cup extra if needed)
2 boneless skinless chicken breasts
1 tsp onion powder
1 tsp salt
1 tbsp Dijon mustard
2 cups broccoli florets (fresh or frozen, cut small)
½ cup sour cream
1 cup shredded cheddar cheese
Fresh parsley, chopped (for garnish)
Instructions
1. Add rice, onion, garlic, and thyme to slow cooker. Pour in chicken broth and stir.
2. Season chicken with onion powder and salt. Rub both sides with Dijon mustard.
3. Place chicken on top of rice mixture. Cover and cook on HIGH for 2 hours or LOW for 5–6 hours.
4. Remove chicken, chop into bite-sized pieces once cool.
5. Steam broccoli and drain. Add broccoli and chicken back to slow cooker.
6. Stir in sour cream. Add up to 1 cup broth if rice needs more cooking.
7. Top with shredded cheddar. Cover and cook on HIGH for 30 minutes until cheese melts.
8. Serve warm with chopped parsley if desired.
Notes
Use steam-in-bag frozen broccoli for ease.
To reheat, add a splash of broth or milk to restore creaminess.
Try different cheeses like Monterey Jack or pepper jack for a flavor twist.
