Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces of mushrooms, sliced
  • 1 cup of Marsala wine (or chicken broth for a non-alcoholic version)
  • 1 cup of low-sodium chicken broth
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of dried Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1 tablespoon of cornstarch (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the ingredients: Slice the mushrooms and chop the onion and garlic.
  2. Sear the chicken in a skillet with olive oil for 3-4 minutes on each side until golden brown.
  3. Transfer the seared chicken to the crockpot and add mushrooms, garlic, onion, dried Italian seasoning, Marsala wine, and chicken broth.
  4. Cover and cook on low for 6-8 hours or on high for 4 hours.
  5. If using, mix cornstarch with cold water to make a slurry and stir it in 30 minutes before serving to thicken the sauce.
  6. Garnish with chopped parsley and serve over pasta, rice, or with crusty bread.

Notes

Searing the chicken adds flavor, and using fresh ingredients improves the dish’s taste. Adjust thickness with cornstarch or a saucepan reduction if desired.
