- 4 chicken breasts
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, chopped
- 2 cups chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the chopped carrots, potatoes, and onion on top of the chicken.
- Pour the chicken broth over the top of the ingredients.
- Sprinkle thyme, salt, and pepper evenly over the mixture.
- Cover and cook on low for 6-8 hours or until the chicken is cooked through and the vegetables are tender.
Notes
For added flavor, sear the chicken before placing it in the crockpot. Feel free to customize vegetables as per your preference.
