- 4 boneless, skinless chicken breasts
- 1 cup diced onions
- 2 cups diced carrots
- 3 cups diced potatoes
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt and pepper to taste
Instructions
- Begin by prepping your ingredients. Dice the onions, carrots, and potatoes, and mince the garlic.
- In the bottom of your crockpot, layer the diced onions, carrots, and potatoes.
- Place the chicken breasts on top of the vegetables.
- In a small bowl, mix together the minced garlic, chicken broth, thyme, rosemary, salt, and pepper.
- Pour this mixture over the chicken and vegetables in the crockpot.
- Cover the crockpot and cook on low for 360 minutes or on high for 240 minutes, until the chicken is cooked through and tender.
- Once done, remove the chicken and shred it with two forks. Stir everything to combine and serve hot.
Notes
For best results, make sure to have enough liquid to prevent drying out. Experiment with different vegetables and seasonings to suit your taste.
