  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 15 oz kidney beans (drained)
  • 15 oz black beans (drained)
  • 28 oz crushed tomatoes
  • 14 oz diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 0.5 tsp oregano
  • 1 tbsp brown sugar (optional)
  • Shredded cheese (for topping)
  • Sour cream (for topping)
  • Green onions (sliced for garnish)

Instructions

  1. Start by browning the ground beef in a skillet along with the diced onion and minced garlic.
  2. Once the beef is browned, drain any excess fat before transferring the mixture into your slow cooker.
  3. Add in the drained kidney and black beans, along with the crushed and diced tomatoes.
  4. Stir in the tomato paste, beef broth, and all the spices: chili powder, ground cumin, smoked paprika, black pepper, salt, oregano, and brown sugar if you’re using it.
  5. Mix everything thoroughly to ensure all ingredients are well combined.
  6. Set your slow cooker to cook on LOW for 360-480 minutes or HIGH for 180-240 minutes.
  7. When the cooking time is up, serve your chili hot with your favorite toppings.

Notes
