Description

This cheesy, kid-friendly lasagna soup is filled with hidden vegetables, making it a comforting and healthy crockpot dinner for the whole family.


Ingredients

Scale

1 lb ground turkey or lean beef

1 zucchini, chopped

1 carrot, peeled and diced

1 bell pepper, chopped

1/2 onion, diced

2 cloves garlic

1 tsp Italian seasoning

1/2 tsp salt

1 jar marinara sauce (24 oz)

4 cups broth

8 oz lasagna noodles

1 cup mozzarella

1/2 cup ricotta

1/4 cup parmesan

Optional: basil or parsley


Instructions

1. Brown meat with onion and garlic.

2. Blend zucchini, carrot, bell pepper with 1 cup broth.

3. Add blended veggies, meat, marinara, seasoning, and broth to crockpot.

4. Cook on LOW for 6 hours or HIGH for 3–4 hours.

5. Add noodles, cook 30 minutes.

6. Stir in mozzarella and parmesan. Serve with ricotta.

Notes

Use alphabet or mini pasta for fun presentation.

Freeze leftovers in single servings.
