- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4 cups mashed potatoes (prepared)
- 1 cup beef broth
Instructions
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add onion, garlic, carrots, and celery to the skillet and sauté until the vegetables are tender.
- Stir in frozen peas, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Pour the beef mixture into a crockpot and add the beef broth.
- Spread the prepared mashed potatoes over the beef mixture in the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until heated through and flavors meld.
- Serve warm.
Notes
Feel free to add other vegetables like corn or green beans for extra flavor and nutrients. Use leftovers from a previous meal to save time on prepping. For a golden crust on the mashed potatoes, broil the dish for a few minutes after it’s cooked in the crockpot.
