Description

A comforting meal that combines savory ground beef and colorful vegetables topped with creamy mashed potatoes, all cooked slowly in a crockpot.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 cups mashed potatoes (prepared)
  • 1 cup beef broth

Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Add onion, garlic, carrots, and celery to the skillet and sauté until the vegetables are tender.
  3. Stir in frozen peas, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  4. Pour the beef mixture into a crockpot and add the beef broth.
  5. Spread the prepared mashed potatoes over the beef mixture in the crockpot.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until heated through and flavors meld.
  7. Serve warm.

Notes

Feel free to add other vegetables like corn or green beans for extra flavor and nutrients. Use leftovers from a previous meal to save time on prepping. For a golden crust on the mashed potatoes, broil the dish for a few minutes after it’s cooked in the crockpot.
