- 1/2 cup butter (softened)
- 1/3 cup vegetable or canola oil
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 egg (at room temperature)
- 1 tsp vanilla extract
- 2 1/3 cups flour

- 1 tsp baking powder
- 5 tbsp butter (for filling)
- 2/3 cup brown sugar
- 1 1/4 cups chopped pecans
- 1 tsp vanilla extract (for filling)
- 1/3 cup heavy cream
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, oil, granulated sugar, and powdered sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the flour, salt, and baking powder, mixing until just combined.
- Portion out 9 cookie balls and place them on the baking sheet, gently flattening each to about 1 inch thick.
- Press down the center of each cookie to create a well.
- Bake for 8-9 minutes, then cool on the baking sheet.
- In a saucepan, melt 5 tbsp butter and stir in brown sugar, pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and a pinch of salt; cook until thickened, about 3-4 minutes.
- Spoon the filling into each cookie well and return to the oven for 3-5 minutes to set.
- Let the cookies cool completely on the baking sheet before transferring to a wire rack.

For best results, ensure your butter and egg are at room temperature and avoid overmixing the ingredients.
