  • 2 pounds chicken breast tenderloins
  • Olive oil for drizzling
  • 1/2 cup honey
  • 2 1/2 tablespoons hot sauce
  • 2 teaspoons cayenne pepper
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Prepare the chicken: Ensure that chicken tenderloins are uniform in size. Set up two shallow dishes—one for the egg wash (beaten eggs mixed with hot sauce) and another for the dry coating (crushed cornflakes, parmesan, smoked paprika, onion powder, and garlic powder).
  2. Coat the chicken: Dip each tenderloin into the egg wash, allowing excess batter to drip off. Transfer to the cornflake mixture, pressing gently to coat all sides. Repeat for an extra crunch and place chicken on a plate or baking sheet.
  3. Cook the chicken: Preheat the oven to 400°F (200°C). Lightly drizzle a baking sheet with olive oil and arrange chicken in a single layer. Drizzle more olive oil over the tops. Bake for 20-25 minutes, flipping halfway, until cooked through and golden.
  4. Make the hot honey sauce: Combine honey, hot sauce, cayenne pepper, chipotle chili powder, garlic powder, and onion powder in a small saucepan over medium-low heat. Stir until smooth, simmer for 2-3 minutes.
  5. Glaze and serve: Once the chicken is baked, transfer to a large bowl and pour warm hot honey sauce over it. Toss gently to coat evenly and serve immediately.

Notes
