Description

A delicious and nutritious crustless quiche made with ricotta cheese and fresh spinach, perfect for breakfast, brunch, or a light dinner.


Ingredients

  • 2 cups chopped fresh spinach
  • 1 cup ricotta cheese
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until smooth.
  3. Stir in the ricotta cheese, Parmesan cheese, and chopped spinach until well combined.
  4. Heat the olive oil in a skillet over medium heat and sauté the mixture for about 2-3 minutes, just until the spinach starts to wilt.
  5. Pour the mixture into a greased pie dish, spreading it evenly.
  6. Bake in the preheated oven for about 30-35 minutes or until the quiche is set and lightly golden on top.
  7. Allow it to cool for a few minutes before slicing and serving.
